Kurayba is a popular Ethiopian shortbread cookie that is often enjoyed with coffee or tea. These cookies are simple to make and have a rich, buttery flavor with a delicate, crumbly texture.
Ingredients
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup unsalted butter (at room temperature)
1 teaspoon vanilla extract (optional)
1/4 teaspoon salt
1/4 teaspoon ground cardamom (optional, for added flavor)
Whole cloves (for decoration, optional)
Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Dough:
In a large mixing bowl, cream the unsalted butter and powdered sugar together until light and fluffy. This should take about 3-5 minutes using an electric mixer. Add the vanilla extract (if using) and mix until combined. In a separate bowl, whisk together the all-purpose flour, salt, and ground cardamom (if using).
Add the dry ingredients:
Gradually add the dry ingredients to the butter and sugar mixture, mixing until a soft dough forms.
Shape the Cookies:
Take small portions of the dough and roll them into balls, about 1 inch in diameter.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball with the palm of your hand or the bottom of a glass to form round, flat cookies.
Decorate (Optional):
If you wish, press a whole clove into the center of each cookie for decoration.
Bake the Cookies:
Bake the cookies in the preheated oven for about 15-18 minutes, or until the edges are lightly golden.
Remove cookie from oven:
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Serve
Once cooled, the cookies can be enjoyed immediately or stored in an airtight container.
