How to make Axriya / Atriya

Axriya, also known as Atriya, is a traditional dessert. This sweet dish made from thin vermicelli noodles is often enjoyed during special occasions and holidays. Here's a detailed recipe to make this delightful treat at home. As it cooks, your kitchen fills with wonderful smells, reminding you of special occasions. Each bite brings back memories of happy times spent with family and friends. And when you finish, you're left with a taste of home and the promise of more good times to come. 


Ingredients

  • 200 grams vermicelli noodles (thin, wheat-based noodles)
  • 4 tablespoons butter or ghee
  • 1/2 cup sugar (adjust to taste)
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon (optional, for added flavor)
  • 2 cups water
  • 1/4 cup sliced almonds or chopped nuts (optional, for garnish)
  • 1/4 cup raisins or dried fruits (optional, for garnish)

Instructions

  1. Prepare the Noodles
    • Break the vermicelli noodles into smaller pieces, about 2-3 inches long. This helps them cook evenly and makes them easier to handle.
  2. Toast the Noodles
  3.  In a large skillet or pan, melt the butter or ghee over medium heat.
  4. Add the broken vermicelli noodles 
  5. Add to the pan and toast them, stirring frequently, until they turn golden brown. This should take about 5-7 minutes. Be careful not to burn the noodles.
  6. Add Spices and Sugar
  7. Once the noodles are toasted, add the ground cardamom, ground cloves, and ground cinnamon (if using) to the pan.
  8. Stir well to coat the noodles with the spices.
  9. Add the sugar and continue to stir until the sugar melts and evenly coats the noodles.
  10.  Cook the Noodles
    • Pour in the water, making sure it covers the noodles.
  11. Bring the mixture to a boil, then reduce the heat to low and let it simmer.
  12. Cover the pan and cook until the noodles are tender and the water has been absorbed. This should take about 10-15 minutes. Stir occasionally to prevent the noodles from sticking to the bottom of the pan.
  13.  Add Optional Garnishes
    • If you’re using almonds or other nuts, lightly toast them in a separate small pan until they are golden brown.
  14. Stir in the toasted nuts and raisins or dried fruits into the cooked noodles, if desired.
  15.  Serve

Tips

  • Adjust the sweetness to your preference by adding more or less sugar.
  • For a richer flavor, you can use ghee instead of butter.
  • Experiment with other spices like nutmeg or allspice for a different flavor profile
  • Axriya can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
